🛒 Ingredients:

(Serves 4-6)

For the Soup Base:

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 carrots, peeled & diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced

For the Chicken & Broth:

  • 2 cups cooked chicken, shredded (rotisserie chicken works great!)
  • 4 cups chicken broth
  • 1 cup milk (or half-and-half for a richer soup)
  • ½ cup heavy cream (optional, for extra creaminess)
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • ½ tsp dried rosemary
  • ½ tsp garlic powder

For the Thickener:

  • ¼ cup all-purpose flour
  • 2 tbsp butter

For the Extras:

  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 large potato, peeled & diced (optional, for extra heartiness)
  • ½ cup grated Parmesan cheese (optional, for extra flavor)
  • Fresh parsley, for garnish

🔥 Instructions:

1. Sauté the Vegetables

  • In a large pot, melt butter and olive oil over medium heat.
  • Add onion, carrots, and celery, cooking for 5 minutes until softened.
  • Stir in garlic and cook for another 30 seconds until fragrant.

2. Make the Roux (Thickener)

  • Push the veggies to one side of the pot and melt 2 tbsp butter in the empty space.
  • Whisk in flour and cook for 1-2 minutes, stirring constantly, until it forms a golden paste.

3. Add Chicken & Broth

  • Slowly pour in chicken broth, stirring constantly to prevent lumps.
  • Add shredded chicken, potatoes (if using), salt, pepper, thyme, rosemary, and garlic powder.
  • Bring to a gentle simmer and cook for 10-15 minutes, until the potatoes are fork-tender.

4. Add Cream & Veggies

  • Stir in milk, heavy cream, peas, and corn. Simmer for another 5 minutes.
  • If using Parmesan cheese, stir it in now for extra richness.

5. Serve & Enjoy!

  • Taste and adjust seasoning if needed.
  • Garnish with fresh parsley and serve hot with crusty bread, biscuits, or puff pastry on the side!

💡 Tips & Variations:

Shortcut: Use pre-cooked rotisserie chicken to save time.
Make it dairy-free: Use coconut milk instead of cream and olive oil instead of butter.
For a low-carb version, skip the potatoes and thicken with cauliflower puree.
