This Paleo Lemon Coconut Bread is a moist, lightly sweetened loaf with a refreshing lemon flavor and a hint of coconut. It’s grain-free, dairy-free, and naturally sweetened, making it a perfect healthy treat for breakfast or a snack.


Ingredients

For the Bread:

  • 1 ¾ cups (175g) almond flour
  • ¼ cup (30g) coconut flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 3 large eggs
  • ¼ cup (60ml) coconut oil, melted
  • ⅓ cup (80ml) honey or maple syrup
  • Zest of 1 lemon
  • Juice of 1 lemon (about 2 tbsp)
  • ½ tsp vanilla extract
  • ½ cup (40g) unsweetened shredded coconut

For the Glaze (Optional):

  • ¼ cup (60ml) coconut butter, melted
  • 1 tbsp honey or maple syrup
  • 1 tbsp lemon juice
  • 1-2 tbsp warm water (to thin, if needed)

Instructions

Step 1: Preheat and Prepare the Pan

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×5-inch (23x13cm) loaf pan with coconut oil or line it with parchment paper.

Step 2: Mix the Dry Ingredients

  1. In a medium bowl, whisk together the almond flour, coconut flour, baking soda, and salt.

Step 3: Mix the Wet Ingredients

  1. In a separate bowl, whisk together the eggs, melted coconut oil, honey (or maple syrup), lemon zest, lemon juice, and vanilla extract until smooth.

Step 4: Combine and Add Coconut

  1. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  2. Fold in the shredded coconut.

Step 5: Bake the Bread

  1. Pour the batter into the prepared loaf pan and spread it evenly.
  2. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Step 6: Prepare the Glaze (Optional)

  1. In a small bowl, whisk together the melted coconut butter, honey (or maple syrup), and lemon juice.
  2. Add warm water as needed to reach a pourable consistency.
  3. Drizzle over the cooled bread.
