  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional, for heat)
  • 1 zucchini, chopped (optional)
  • 1 cup (150g) cooked beans or lentils (optional, for protein)
  • Juice of ½ lemon (for brightness)
  • Fresh parsley for garnish

Instructions

1. Sauté the Vegetables

  1. In a large pot, heat the olive oil or butter over medium heat.
  2. Add the onion, garlic, carrots, and celery, cooking for 5 minutes until softened.

2. Add the Cabbage and Tomatoes

  1. Stir in the chopped cabbage and cook for 2-3 minutes until slightly wilted.
