This smooth and comforting pumpkin soup is rich, flavorful, and perfect for chilly days. It’s easy to make with fresh or canned pumpkin and can be customized with spices and toppings.


Ingredients (Serves 4-6)

  • 1 tablespoon olive oil or butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups (900g) pumpkin puree (or 1 small fresh pumpkin, peeled and diced)
  • 3 cups (720ml) vegetable or chicken broth
  • 1 cup (240ml) heavy cream or coconut milk
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • Salt and black pepper, to taste
  • 1 tablespoon maple syrup or honey (optional, for sweetness)

For Garnish:

  • Toasted pumpkin seeds
  • Croutons
  • A drizzle of cream or olive oil

Instructions

1. Sauté the Aromatics

  1. In a large pot, heat the olive oil or butter over medium heat.
  2. Add the onion and cook for 3-4 minutes, until soft.
  3. Stir in the garlic and cook for 30 seconds until fragrant.

2. Cook the Pumpkin

  1. Add the pumpkin puree (or fresh pumpkin chunks) and broth.
  2. Stir in the cinnamon, nutmeg, salt, and black pepper.
  3. Bring to a boil, then reduce heat and simmer for 15 minutes (or until fresh pumpkin is tender).

3. Blend the Soup

  1. Remove from heat and use an immersion blender to puree the soup until smooth.
  2. If using a regular blender, blend in batches, then return to the pot.

4. Add Cream and Serve

  1. Stir in the heavy cream or coconut milk and mix well.
  2. Taste and adjust seasoning, adding maple syrup or honey if desired.
  3. Heat for another 2 minutes, then serve hot.
