Preserving green beans in a tangy pickling brine creates a crunchy, flavorful snack or side dish. These pickled green beans are perfect as a snack, tossed in salads, or served as a garnish for Bloody Mary cocktails.


Ingredients:

  • 2 pounds fresh green beans, trimmed
  • 4 garlic cloves, peeled and smashed
  • 2 teaspoons dill seeds (or 4 fresh dill sprigs)
  • 2 teaspoons mustard seeds
  • 1 teaspoon red pepper flakes (optional, for a spicy kick)
  • 2 1/2 cups white vinegar (5% acidity)
  • 2 1/2 cups water
  • 2 tablespoons kosher salt
  • 1 tablespoon granulated sugar

Instructions:

1. Prepare the Green Beans

  • Wash and trim the ends of the green beans.
  • Optional: Blanch the green beans by boiling them for 1-2 minutes and then transferring them to an ice bath. This helps maintain their bright color and crunch.

2. Prepare the Brine

  • In a medium saucepan, combine vinegar, water, salt, and sugar.
  • Bring the mixture to a boil, stirring until the salt and sugar dissolve. Remove from heat.

3. Pack the Jars

  • Sterilize jars by boiling them in water for 10 minutes. Keep them warm until ready to use.
  • Divide the garlic, dill seeds (or sprigs), mustard seeds, and red pepper flakes evenly among the jars.
  • Pack the green beans tightly into the jars, standing them upright if possible.

4. Add the Brine

  • Carefully pour the hot brine over the green beans, ensuring they are completely submerged and leaving about 1/2 inch of headspace.
  • Wipe the rims clean, place the lids on the jars, and screw the rings on snugly.

5. Process the Jars

  • Place the filled jars in a water bath canner, ensuring they’re fully submerged in boiling water.
  • Process for 10 minutes (adjust for altitude if needed).
  • Remove the jars and let them cool on a towel or rack.

6. Check the Seals

  • Once cooled, press the center of each lid. If it doesn’t pop, the jars are sealed and ready for storage.
