  • Extra Parmesan cheese

Instructions

  1. Cook the Pasta
    • Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water before draining.
  2. Prepare the Avocado Pesto
    • In a food processor or blender, combine the avocados, basil leaves, Parmesan cheese, pine nuts, garlic, and lemon juice.
    • Pulse until the mixture is smooth and creamy.
    • With the motor running, slowly drizzle in the olive oil until fully incorporated.
    • Season with salt and pepper to taste.
  3. Combine the Pasta and Pesto
    • Return the drained pasta to the pot or a large mixing bowl. Add the avocado pesto and toss to coat the pasta evenly.
    • If the sauce is too thick, add the reserved pasta water, one tablespoon at a time, until the desired consistency is reached.
  4. Serve
    • Divide the pasta into bowls or serve family-style on a large platter.
    • Garnish with cherry tomatoes, red pepper flakes, extra Parmesan, or fresh basil leaves if desired.
