Ingredients

  • 400g (14 oz) spaghetti or your favorite pasta
  • 2 cups fresh basil leaves (packed)
  • 2 cloves garlic
  • 1/4 cup pine nuts (lightly toasted)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra virgin olive oil (plus more as needed)
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Cook the Pasta
    • Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1/4 cup of the pasta water, then drain.
  2. Prepare the Pesto Sauce
    • In a food processor or blender, combine the basil leaves, garlic, and pine nuts. Pulse until coarsely chopped.
    • Slowly drizzle in the olive oil while blending until a smooth consistency is achieved.
    • Stir in the Parmesan cheese and season with salt and pepper to taste. Blend again until fully incorporated.
  3. Combine Pasta and Pesto
    • Return the drained pasta to the pot or a large mixing bowl. Add the pesto sauce and toss to coat evenly.
    • If the sauce is too thick, add a splash of the reserved pasta water to loosen it.
  4. Serve
    • Divide the pasta among plates or bowls. Garnish with cherry tomatoes, extra Parmesan cheese, and fresh basil leaves if desired.
