Sellou, also known as Sfouf, is a rich and nutty Moroccan treat made with roasted flour, ground almonds, sesame seeds, and spices. This traditional energy-packed dessert is particularly popular during Ramadan and special occasions like weddings. It has a crumbly texture and a delightful flavor enhanced by warm spices and honey.


Ingredients

Dry Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (150g) sesame seeds (toasted and ground)
  • 1 cup (150g) almonds (blanched, toasted, and ground)
  • 1/2 cup (70g) walnuts or peanuts (optional, toasted and ground)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground anise seeds (optional)
  • 1/4 teaspoon ground ginger

Wet Ingredients:

  • 1/2 cup (120ml) melted unsalted butter
  • 1/4 cup (60ml) vegetable oil
  • 1/2 cup (125ml) honey (or adjust to taste)

Garnish:

  • Whole almonds, sesame seeds, or powdered sugar (optional)

Instructions

1. Prepare the Flour

  • Spread the flour evenly on a baking sheet.
  • Roast in a preheated oven at 350°F (180°C) for about 20-25 minutes, stirring occasionally until lightly browned.
  • Let it cool completely, then sift the flour to remove any lumps.

2. Toast the Sesame Seeds and Almonds

  • Toast the sesame seeds in a dry skillet over medium heat until golden and aromatic. Grind finely.
  • Toast the almonds until golden, then grind into a fine or coarse texture, depending on preference.

3. Mix the Dry Ingredients

  • In a large bowl, combine the roasted flour, ground sesame seeds, ground almonds, and spices (cinnamon, anise, ginger). Mix well.

4. Incorporate the Wet Ingredients

  • Add the melted butter, vegetable oil, and honey to the dry mixture.
  • Mix thoroughly until the mixture is crumbly but holds together when pressed. Adjust the amount of honey or oil if needed.

5. Shape the Sellou

  • Transfer the mixture to a serving dish or mold. Press it firmly to compact the mixture.
  • Alternatively, shape into small balls or mounds for individual servings.

6. Garnish and Serve

  • Garnish with whole almonds, sesame seeds, or a dusting of powdered sugar.
  • Serve at room temperature with Moroccan mint tea.
