Zaalouk is a traditional Moroccan salad made from eggplants and tomatoes, seasoned with aromatic spices and olive oil. This warm, smoky, and flavorful dish is a staple in Moroccan cuisine, often served as a side dish or a dip with crusty bread.


Ingredients

  • 2 large eggplants
  • 3 medium ripe tomatoes, peeled and diced
  • 3 tablespoons of olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of paprika
  • 1/2 teaspoon of ground chili powder (optional)
  • 1/2 teaspoon of salt (or to taste)
  • 1/4 teaspoon of black pepper
  • 1 tablespoon of tomato paste
  • Juice of 1/2 lemon
  • 2 tablespoons of chopped fresh cilantro and parsley

Instructions

1. Prepare the Eggplants

  • Roast or grill the eggplants over an open flame or in the oven until the skin is charred and the flesh is soft (about 20-30 minutes).
  • Once cooled, peel off the charred skin and chop the flesh into small pieces.

2. Cook the Tomatoes

  • Heat olive oil in a large skillet over medium heat.
  • Add the minced garlic and sauté for 1 minute until fragrant.
  • Stir in the diced tomatoes and cook until softened (about 5-7 minutes).

3. Add the Spices

  • Mix in the cumin, paprika, chili powder (if using), salt, black pepper, and tomato paste.
  • Cook for another 2 minutes to allow the flavors to meld.

4. Combine the Ingredients

  • Add the roasted eggplant to the skillet with the tomato mixture.
  • Mash the eggplant and tomatoes together using a fork or potato masher until you achieve a slightly chunky texture.
  • Cook the mixture on low heat for about 10-15 minutes, stirring occasionally, until the excess liquid evaporates.

5. Final Touches

  • Stir in the lemon juice, cilantro, and parsley. Adjust seasoning if needed.

6. Serve

  • Zaalouk can be served warm, at room temperature, or chilled.
  • Drizzle with a bit of olive oil before serving and enjoy with fresh bread, pita, or as part of a mezze platter.
