Ingredients for Chicken and Dumplings

For the Chicken Stew

  • 1 tbsp olive oil or butter
  • 1 lb (450 g) cooked chicken, shredded or cubed
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 4 cups (1 L) chicken broth
  • 1 cup (240 ml) heavy cream or milk
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper, to taste
  • 1 tbsp cornstarch, mixed with 2 tbsp water (optional, for thickening)

For the Bisquick Dumplings

  • 2 cups Bisquick baking mix
  • 2/3 cup milk

Instructions

Make the Chicken Stew

  1. Cook the Vegetables
    • Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, cooking until softened (about 5 minutes).
    • Stir in garlic and cook for 1 minute.
  2. Add the Liquid and Chicken
    • Pour in chicken broth and heavy cream. Stir in thyme, parsley, salt, and pepper.
    • Add shredded chicken and bring the mixture to a simmer.
    • If a thicker consistency is desired, stir in the cornstarch slurry and cook for an additional 2 minutes.

Make the Dumplings

  1. Prepare the Dumpling Batter
    • In a mixing bowl, combine Bisquick and milk. Stir until just combined; do not overmix.
  2. Add Dumplings to the Stew
    • Drop spoonfuls of the dumpling batter onto the simmering stew. Space them out evenly.
  3. Cook the Dumplings
    • Cover the pot with a tight-fitting lid and reduce heat to low.
    • Cook for 10-15 minutes without lifting the lid to ensure the dumplings are cooked through and fluffy.

Serve

  • Ladle the chicken stew and dumplings into bowls. Garnish with extra parsley if desired, and serve warm with a side of crusty bread or a fresh salad.

Tips

  • Use leftover rotisserie chicken or cooked turkey for an even faster prep time.
  • For added flavor, stir in a splash of white wine or a dash of hot sauce.
  • To reheat leftovers, add a splash of chicken broth to maintain the stew’s creamy texture.

Enjoy this quick and easy take on classic chicken and dumplings, perfect for cozy family dinners!
