Ingredients (Serves 4):

  • 300 g (10 oz) fresh spinach leaves (washed)
  • 2 medium potatoes (peeled and diced)
  • 1 medium onion (chopped)
  • 2 garlic cloves (minced)
  • 1 tablespoon olive oil or butter
  • 750 ml (3 cups) vegetable or chicken broth
  • 100 ml (1/2 cup) heavy cream
  • 50 g (1/2 cup) grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: croutons or toasted bread for serving

Instructions:

1. Sauté the aromatics:

  1. Heat the olive oil or butter in a large pot over medium heat.
  2. Add the chopped onion and garlic, sautéing until fragrant and translucent (about 3 minutes).

2. Cook the base vegetables:

  1. Add the diced potatoes to the pot and stir well.
  2. Pour in the broth, bring to a boil, then reduce the heat and simmer for 15-20 minutes, until the potatoes are tender.

3. Add the spinach:
