Ingredients:
- 2 medium eggplants (or 1 large), peeled and diced

Instructions:

4. Combine and Mash:

- Use a wooden spoon or a potato masher to mash the eggplants and tomatoes together into a chunky puree.
- Cook for another 5-7 minutes, stirring occasionally, until the flavors meld and the mixture thickens.
5. Add Lemon and Herbs:
- Stir in the lemon juice and fresh parsley or cilantro. Adjust the seasoning with more salt and pepper, if needed.
