Za’alook is a traditional Moroccan cooked salad made with eggplants, tomatoes, and fragrant spices. This smoky, flavorful dish is served warm or at room temperature and pairs beautifully with bread or as a side dish.


Ingredients:

  • 2 medium eggplants (or 1 large), peeled and diced
  • 3 large ripe tomatoes, finely chopped (or 1 cup canned crushed tomatoes)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/4 teaspoon chili powder (optional, for heat)
  • Juice of 1/2 lemon
  • 2 tablespoons fresh parsley or cilantro, chopped
  • Salt and pepper, to taste

Instructions:

1. Prepare the Eggplants:

  • Place the diced eggplants in a colander and sprinkle with salt. Let them sit for 15-20 minutes to release their bitterness, then rinse and pat dry.

2. Cook the Eggplants:

  • Heat 1 tablespoon of olive oil in a large pan over medium heat.
  • Add the eggplants and cook, stirring occasionally, for about 10-15 minutes, until they are soft and slightly golden. Remove from the pan and set aside.

3. Cook the Tomatoes and Garlic:

  • In the same pan, heat the remaining olive oil.
  • Add the minced garlic and sauté for 1 minute until fragrant.
  • Stir in the chopped tomatoes, paprika, cumin, chili powder (if using), salt, and pepper. Cook for about 10 minutes until the tomatoes break down into a sauce.

4. Combine and Mash:

  • Return the cooked eggplants to the pan with the tomato mixture.
  • Use a wooden spoon or a potato masher to mash the eggplants and tomatoes together into a chunky puree.
  • Cook for another 5-7 minutes, stirring occasionally, until the flavors meld and the mixture thickens.

5. Add Lemon and Herbs:

  • Stir in the lemon juice and fresh parsley or cilantro. Adjust the seasoning with more salt and pepper, if needed.

6. Serve:

  • Serve warm or at room temperature with crusty bread, pita, or as a side to grilled meats or fish.

  • Add a pinch of smoked paprika for an extra layer of flavor.
