🛒 Ingredients:

For the Creamy Base:

  • 1½ cups heavy cream (or half-and-half for a lighter version)
  • ½ cup grated Parmesan cheese
  • 1 tbsp cornstarch mixed with 2 tbsp water (optional, for a thicker soup)
  • 2 cups fresh spinach, chopped

For Serving:

  • Fresh basil, for garnish
  • Extra Parmesan cheese
  • Crusty bread or garlic bread

🔥 Instructions:

1. Sauté the Vegetables

  • Heat olive oil in a large pot over medium heat.
  • Add onions, carrots, and celery, cooking for 5 minutes until softened.
  • Stir in garlic and cook for another 30 seconds until fragrant.

2. Add Chicken & Broth

  • Pour in chicken broth and add shredded chicken, sun-dried tomatoes, salt, pepper, Italian seasoning, and red pepper flakes.
