This moist and flavorful carrot cake is packed with warm spices, shredded carrots, and a rich cream cheese frosting. It’s perfect for any occasion!


Ingredients

For the Cake:

  • 2 cups (250g) all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar
  • 1 cup (240ml) vegetable oil
  • 4 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups (250g) grated carrots
  • 1/2 cup (120g) crushed pineapple, drained (optional)
  • 3/4 cup (75g) chopped walnuts or pecans (optional)

For the Cream Cheese Frosting:

  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (115g) unsalted butter, softened
  • 2 cups (240g) powdered sugar
  • 1 tsp vanilla extract

Instructions

Step 1: Preheat and Prepare

  1. Preheat the oven to 350°F (175°C).
  2. Grease and line two 9-inch (23cm) round cake pans with parchment paper.

Step 2: Make the Cake Batter

  1. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  2. In a separate large bowl, whisk the sugars, oil, eggs, and vanilla until well combined.
  3. Gradually mix in the dry ingredients until just combined.
  4. Fold in the grated carrots, crushed pineapple (if using), and nuts (if using).

Step 3: Bake the Cake

  1. Divide the batter evenly between the prepared pans.
  2. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Step 4: Make the Frosting

  1. Beat the cream cheese and butter until smooth.
  2. Gradually add the powdered sugar and mix until creamy.
  3. Stir in the vanilla extract.

Step 5: Assemble the Cake

  1. Place one cake layer on a serving plate and spread a layer of frosting.
  2. Place the second cake layer on top and frost the entire cake.
  3. Garnish with additional chopped nuts or a sprinkle of cinnamon if desired.

Step 6: Chill and Serve

  • Let the cake set in the refrigerator for 30 minutes before slicing.
