Whoopie pies are a classic treat made of two soft, cakey chocolate cookies sandwiched together with a creamy filling. They are like handheld chocolate cakes with a fluffy, sweet center.


Ingredients (Makes 10 Whoopie Pies)

For the Chocolate Cakes:

  • 2 cups (250g) all-purpose flour
  • ½ cup (40g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) buttermilk

For the Creamy Filling:

  • ¾ cup (170g) unsalted butter, softened
  • 1 ½ cups (190g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 jar (7 ounces / 200g) marshmallow fluff

Instructions

1. Make the Chocolate Cakes

  1. Preheat your oven to 175°C (350°F). Line two baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a separate large bowl, beat the butter and sugar until light and fluffy.
  4. Add the egg and vanilla extract, mixing until combined.
  5. Gradually mix in the dry ingredients, alternating with the buttermilk, until smooth.

2. Bake the Cakes

  1. Drop tablespoon-sized mounds of batter onto the prepared baking sheets, spacing them 2 inches apart.
  2. Bake for 10-12 minutes, or until the tops spring back when lightly touched.
  3. Let the cakes cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

3. Make the Filling

  1. In a bowl, beat the butter until smooth.
  2. Gradually add the powdered sugar and vanilla, mixing until fluffy.
  3. Gently fold in the marshmallow fluff until well combined.

4. Assemble the Whoopie Pies

  1. Spread or pipe a generous layer of filling onto the flat side of one cake.
  2. Place another cake on top, pressing gently to sandwich them together.
  3. Repeat with the remaining cakes and filling.

Tips for Perfect Whoopie Pies

Use buttermilk for a soft and tender texture.
Chill the filling for 10-15 minutes before assembling for easier handling.
Store in an airtight container at room temperature for up to 2 days or in the fridge for up to 5 days.
For variations, add mini chocolate chips to the filling or use a peanut butter filling instead.
