A classic Moroccan dish, this fish tagine combines tender white fish, a rich tomato-based sauce, briny olives, and fragrant spices. It’s an easy, healthy, and flavorful recipe that brings the essence of Moroccan cuisine to your table.


Ingredients

For the Fish Marinade:

  • 4 white fish fillets (cod, sea bass, or halibut)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp salt

For the Tagine Base:

  • 2 tbsp olive oil
  • 1 large onion, thinly sliced
  • 2 garlic cloves, minced
  • 3 medium tomatoes, grated (or 1 can diced tomatoes)
  • 1/2 cup green or black olives, pitted
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp ground cumin
  • 1/4 tsp cayenne pepper (optional)
  • 1 cup water or fish stock
  • Lemon slices, for garnish

Instructions

  1. Marinate the Fish:
    • In a bowl, mix olive oil, lemon juice, garlic, paprika, cumin, and salt.
    • Rub the marinade over the fish fillets, ensuring they are evenly coated.
    • Cover and let marinate in the refrigerator for 30 minutes to 1 hour.
  2. Prepare the Tagine Base:
    • Heat olive oil in a large tagine or deep skillet over medium heat.
    • Add onions and garlic, and sauté until softened, about 5 minutes.
    • Stir in the grated tomatoes, paprika, turmeric, cumin, cayenne pepper, parsley, and cilantro.
    • Pour in the water or fish stock, stir, and let the sauce simmer for 10 minutes.
  3. Add the Fish:
    • Nestle the marinated fish fillets into the sauce, ensuring they are partially submerged.
    • Scatter the olives around the fish.
    • Cover the tagine or skillet and let the fish simmer gently for 15–20 minutes, or until cooked through and flaky.
  4. Serve:
    • Garnish with lemon slices and additional parsley or cilantro if desired.
    • Serve hot with crusty bread, steamed rice, or Moroccan couscous.

Tips:

  • You can add vegetables like potatoes, carrots, or bell peppers to the tagine for a heartier meal.
  • If you don’t have a tagine, a heavy-bottomed pot or skillet with a lid works perfectly.
