- Juice of 1 lime
- 2 tbsp fresh cilantro, chopped
Optional Garnishes
- Sliced avocado
- Sour cream or Greek yogurt
- Shredded cheese
- Tortilla strips or chips
Instructions
Cook the Chicken
- Heat olive oil in a large pot over medium heat. Add diced chicken, season with salt and pepper, and cook until browned on all sides. Remove and set aside.
Sauté the Vegetables
- In the same pot, add onion, bell pepper, and jalapeño. Cook for 3-4 minutes until softened. Stir in garlic and cook for another minute.
Add Spices and Liquid
- Sprinkle cumin, smoked paprika, and chili powder over the vegetables, stirring to coat.
- Add chicken broth, diced tomatoes (with juices), and cooked chicken back to the pot. Bring to a boil.
Simmer the Soup
- Reduce the heat to low and stir in the black beans, white beans, and corn. Simmer for 15-20 minutes to allow the flavors to meld.
Finish with Lime and Cilantro
- Stir in lime juice and fresh cilantro just before serving. Adjust seasoning with salt and pepper as needed.
Serve
- Ladle the soup into bowls and garnish with your favorite toppings. Serve with crusty bread, tortilla chips, or a side of rice.
Tips
- For a thicker soup, mash some of the beans with a fork before adding them.
- Swap chicken for turkey or make it vegetarian by using extra beans and vegetable broth.
- Add extra lime juice for a tangier flavor or a dash of hot sauce for more heat.
Enjoy this vibrant and hearty soup that brings a zesty twist to classic chicken and bean combinations!
