Zesty Chicken and Bean Soup with Cilantro and Lime

This zesty chicken and bean soup is a flavorful, healthy dish packed with protein and brightened by fresh cilantro and lime. Perfect for a quick dinner or meal prep!


Ingredients

  • 1 tbsp olive oil
  • 1 lb (450 g) chicken breasts or thighs, diced
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 bell pepper, diced (any color)
  • 1 jalapeño, minced (optional, for heat)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • 4 cups (1 L) chicken broth
  • 1 (14 oz/400 g) can diced tomatoes, with juices
  • 1 (14 oz/400 g) can black beans, drained and rinsed
  • 1 (14 oz/400 g) can white beans, drained and rinsed
  • 1 cup (150 g) frozen or canned corn
  • Salt and pepper, to taste
  • Juice of 1 lime
  • 2 tbsp fresh cilantro, chopped

Optional Garnishes

  • Sliced avocado
  • Sour cream or Greek yogurt
  • Shredded cheese
  • Tortilla strips or chips

Instructions

Cook the Chicken

  1. Heat olive oil in a large pot over medium heat. Add diced chicken, season with salt and pepper, and cook until browned on all sides. Remove and set aside.

Sauté the Vegetables

  1. In the same pot, add onion, bell pepper, and jalapeño. Cook for 3-4 minutes until softened. Stir in garlic and cook for another minute.

Add Spices and Liquid

  1. Sprinkle cumin, smoked paprika, and chili powder over the vegetables, stirring to coat.
  2. Add chicken broth, diced tomatoes (with juices), and cooked chicken back to the pot. Bring to a boil.

Simmer the Soup

  1. Reduce the heat to low and stir in the black beans, white beans, and corn. Simmer for 15-20 minutes to allow the flavors to meld.

Finish with Lime and Cilantro

  1. Stir in lime juice and fresh cilantro just before serving. Adjust seasoning with salt and pepper as needed.

Serve

  • Ladle the soup into bowls and garnish with your favorite toppings. Serve with crusty bread, tortilla chips, or a side of rice.
