Ingredients

  • 1 lb (450 g) chicken breasts or thighs, diced

  • 1 cup wild rice, rinsed
  • 4 cups (1 L) chicken broth
  • 2 cups (480 ml) heavy cream

Instructions

Cook the Chicken

  1. Heat olive oil or butter in a large pot over medium heat. Add the diced chicken, season with salt and pepper, and cook until browned and cooked through (about 5-7 minutes). Remove the chicken and set it aside.

Cook the Vegetables

  1. In the same pot, add onion, carrots, and celery. Cook for 5-7 minutes until the vegetables begin to soften. Stir in garlic and cook for an additional 1 minute.

Add Rice, Broth, and Spices

  1. Add the wild rice to the pot, then pour in the chicken broth. Stir in dried thyme, bay leaf, salt, and pepper. Bring to a boil.
