Ingredients for the Dumplings

  • 1 ½ cups (190 g) all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup (120 g) shredded cheddar cheese
  • 2 tbsp fresh chives, chopped
  • ¾ cup (180 ml) milk
  • 2 tbsp unsalted butter, melted

Ingredients for the Chicken Stew

  • 1 tbsp olive oil
  • 1 lb (450 g) chicken thighs, cut into bite-sized pieces
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 4 cups (1 L) chicken broth
  • 1 cup (240 ml) heavy cream
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste

Instructions

Make the Chicken Stew

  1. Cook the Chicken
    • Heat olive oil in a large pot over medium heat.
    • Season chicken pieces with salt and pepper, then sauté until browned. Remove and set aside.
  2. Cook the Vegetables
    • In the same pot, add onion, carrots, and celery. Cook until softened (about 5 minutes).
    • Stir in garlic and cook for another minute.
  3. Simmer the Stew
    • Add chicken broth, heavy cream, thyme, bay leaf, and the cooked chicken back into the pot.
    • Bring to a boil, then reduce heat and let simmer for 15-20 minutes.
