This Moroccan chicken and rice dish is a comforting one-pot meal that combines tender chicken, aromatic spices, and perfectly cooked rice. It’s a simple yet delicious way to enjoy Moroccan flavors any day of the week.

Ingredients

For the Chicken:

  • 4 chicken thighs (or drumsticks)
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • Salt and black pepper to taste

For the Rice:

  • 1 1/2 cups basmati or long-grain rice
  • 3 cups chicken broth (or water)
  • 1/2 cup raisins or dried apricots (optional)
  • 1/4 cup almonds, toasted (for garnish)
  • 2 tbsp fresh parsley or cilantro, chopped (for garnish)

Instructions

1. Sear the Chicken

  1. Heat olive oil in a large skillet or pot over medium-high heat.
  2. Season the chicken with salt and pepper, then sear on both sides until golden brown. Remove and set aside.

2. Cook the Aromatics

  1. In the same pot, sauté the onions until soft and translucent.
  2. Add garlic and spices (cumin, paprika, turmeric, cinnamon, ginger) and cook for 1 minute until fragrant.

3. Add the Rice

  1. Stir in the rice, coating it with the aromatic mixture.
  2. Add the chicken broth and bring to a boil.

4. Combine and Simmer

  1. Place the seared chicken back into the pot, nestling it into the rice.
  2. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the chicken is tender.

5. Add the Finishing Touches

  1. Stir in raisins or dried apricots (if using) and let sit for 5 minutes.
  2. Garnish with toasted almonds and fresh parsley or cilantro.
