Ingredients (Serves 4):

  • 1 cup couscous
  • 1 can (400 g) chickpeas (drained and rinsed)
  • 100 g (3.5 oz) feta cheese (crumbled)
  • 1/2 cup Kalamata olives (pitted and sliced)
  • 1 cucumber (diced)
  • 1/2 red onion (thinly sliced)
  • 1 large tomato (diced)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup extra virgin olive oil

  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

1. Prepare the couscous:
