Taktouka is a traditional Moroccan salad made with roasted bell peppers, tomatoes, and warm spices. It’s delicious as a side dish, dip, or even a light meal with crusty bread.


Ingredients:

  • 2 large green or red bell peppers
  • 3 large ripe tomatoes, peeled and chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder (optional, for heat)
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley or cilantro, chopped

Instructions:

1. Roast the Bell Peppers:

  • Preheat your oven to 425°F (220°C) or turn on the broiler.
  • Place the whole bell peppers on a baking sheet and roast, turning occasionally, until the skin is charred and blistered (about 20-25 minutes).
  • Place the roasted peppers in a bowl, cover with plastic wrap, and let them steam for 10 minutes.
  • Peel off the charred skin, remove the seeds, and dice the peppers.

2. Prepare the Tomatoes:

  • To peel the tomatoes easily, score an “X” on the bottom of each tomato and blanch them in boiling water for 30 seconds. Transfer to an ice bath, then peel off the skin.
  • Chop the peeled tomatoes finely.

3. Cook the Salad:

  • Heat olive oil in a skillet over medium heat.
  • Add the minced garlic and sauté until fragrant (1-2 minutes).
  • Stir in the tomatoes, paprika, cumin, chili powder (if using), salt, and pepper. Cook for 10-15 minutes, stirring occasionally, until the tomatoes break down into a sauce.
  • Add the diced roasted peppers and continue cooking for another 5-10 minutes, allowing the flavors to meld.

4. Finish with Herbs:

  • Stir in the fresh parsley or cilantro. Adjust seasoning to taste.

5. Serve:

  • Serve warm or at room temperature with crusty bread, pita, or as a side to grilled meats or tagines.

Tips for Perfect Taktouka:

  • Smoky Flavor: For a more authentic taste, grill the peppers over an open flame instead of roasting them.
  • Make Ahead: Taktouka tastes even better the next day, as the flavors deepen.
  • Add Texture: Include a drizzle of olive oil and some olives as a garnish.
