Ingredients:

  • 1 cup dried lentils (green or brown) or 2 cups cooked lentils
  • 1/2 red onion, finely chopped
  • 1/2 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup raisins or dried apricots, chopped (optional)

For the Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon red wine vinegar or apple cider vinegar
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika

Instructions:

1. Cook the Lentils:

  • Rinse the lentils under cold water.
