Here’s a simple recipe for a soft and fluffy Sponge Cake:

Ingredients:

  • 4 large eggs, at room temperature
  • 1 cup (200g) granulated sugar
  • 1 cup (125g) all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup (60g) unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/4 cup (60ml) warm water

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan, or line the bottom with parchment paper.
  2. Beat the Eggs and Sugar:
    In a large mixing bowl, beat the eggs and sugar with an electric mixer on medium-high speed for about 5-8 minutes, until the mixture is pale, thick, and has doubled in volume.
  3. Prepare the Dry Ingredients:
    In a separate bowl, sift the flour, baking powder, and salt together. This helps to keep the cake light and airy.
  4. Fold in the Dry Ingredients:
    Gently fold the dry ingredients into the egg mixture using a spatula or a whisk, being careful not to deflate the batter.
  5. Add the Wet Ingredients:
    Stir in the melted butter, vanilla extract, and warm water. Be gentle and avoid overmixing.
  6. Bake the Cake:
