Ingredients (Serves 4)
For the Chicken Tagine:
- 1 whole chicken (cut into pieces) or 4-6 chicken thighs/drumsticks
- 2 medium onions, finely chopped
- 3 cloves garlic, minced
- 2 preserved lemons, quartered (or 1 lemon, thinly sliced, if unavailable)
- 1 cup green or purple olives
- 1/4 cup olive oil
- 1/2 cup water or chicken broth
- 2 tablespoons chopped fresh parsley and cilantro

- 1 teaspoon ground turmeric
- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1 teaspoon paprika (optional for color)
- 1/2 teaspoon salt
Instructions
1. Prepare the Ingredients
- If using a whole chicken, cut it into pieces.
- Rinse the preserved lemons to remove excess salt.
2. Marinate the Chicken
- In a large bowl, mix the chicken with the spices (turmeric, ginger, black pepper, paprika, and salt), olive oil, and minced garlic.
- Let it marinate for at least 30 minutes (or overnight in the fridge for deeper flavor).
3. Cook the Tagine
- Heat a tagine or a heavy-bottomed pot over medium heat.
